Slow Roasted Chicken

This is one of the simplest slow-roasted chickens I have ever made. This takes time but is very well worth it. I brined the chicken in salt sugar solution for 12 hours. I dried it in the fridge uncovered for 12 more hours. Then I roasted the chicken in the oven at 300 degrees for 4 hours, basting with honey soy mixture every half hour.
