Mindless food
I don't buy something bulk on purpose unless I find much use of it...
That being said, I have no direction for the next few dishes that I came up with only a few theories and some time...
Before I start, I remade a dish that I posted some time ago... felt like justifying the dish better after looking at it for a while.
This was the dish with risotto and chicken.
Moving on...
I had eggs, leftover ragu, and a bunch of potatoes. I was inspired by Mexican food and since it was for breakfast, I decide to do this dish, giving a Mexican feel, though it is nowhere Mexican in ingredients.
Anyway, the first thing that came to mind was hash browns.
So I shredded some potatoes, dried them in a paper towel, and gently squeeze the moisture out of it. on a hot pan, I spread the potatoes over the pan and place a few nobs of butter over and on the sides and season it well with salt and pepper.
Next, I took my ragu and add a little diced onions, giving it a fresher bite and warm through. Then, of course, a couple of simple fried eggs. The yolks are still runny and I garnished with cilantro over the top.
The next day, I was out of ragu but had fresh tomatoes.
So I did the very same hash browns that I like. The diced up some tomatoes and onions onto a hot pan with butter. Salt pepper to taste and a splash of Worcestershire sauce. I cooked off most of the liquid and keeping it a little dry and sticky. Then garnished with cilantro. This is a lighter portion.
Btw, a touch of sweetness comes from sweet soy sauce for both dishes around the plate.
