A rather unplanned and random dish, which half of what I make are often unplanned random food. Sometimes when it is more spontaneous, it ends with a pleasant surprise.
This is fettuccine made with a homemade tomato sauce. The tomato sauce is made with fresh tomatoes, garlic, onion, blitzed. In the pot with olive oil, it is reduced and darkened and it is then added with Worcestershire sauce, a little ketchup, and some dried thyme leaves. Seasoned with salt pepper and a little bit of sugar.
The Mushrooms are simply cooked with a thyme-infused butter and sauteed.
The skirt steak was a poor choice of cut... or rather poor preparation as it was rather tough. But it was simply cooked medium rare with butter and thyme. The jus left behind was then added with Worcestershire gastrique that is reduced down.
The dish was topped with strips of scallion that is soaked in ice water to create the curl effect.
