Steak Nights

This is a skirt steak, topped with pesto and a side of pan-roasted potatoes.
I marinated the steak 6 hours ahead with balsamic vinegar, soy, and sugar. 
The pesto is made with cilantro, parmesan, garlic, bread crumbs, and olive oil. 
The potatoes are pre-cooked from a can. All I did was pan-roasted it in butter and finished with lime juice.

This is a sirloin, with mashed potatoes, roasted cauliflower, and roasted onions. I had a special seasoning for the steak, with consisted of salt, pepper, cumin, and garlic powder. But the unique addition to that seasoning is instant 3in1 coffee mix. I decided on using the 3in1 simply for its precise 3 ingredients. Coffee for the smokey element, creamer to aid the Maillard reaction, and sugar to balance everything else. I roasted the cauliflower in an air fryer, sprinkled it with a few random species, and drizzled it with a rice vinegar sugar dressing.
